Ingredients
Serves: 10.
- 1 cup coconut butter
- 1 cup canned coconut milk
- 1 cup unsweetened, shredded coconut
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 teaspoon sugar substitute
Method
- Combine all ingredients except for the shredded coconut together in a double boiler or a bowl set over a saucepan of simmering water.
- Stir until everything is melted and combined.
- Remove bowl from heat and place in the fridge until the mixture has firmed up and can be rolled into balls.
- Form the mixture into 1′ balls.
- Roll each ball in the shredded coconut until well coated.
- Store in the fridge as they will melt at room temperature.
