Ingredients
- 3 cups (500 g) cauliflower rice- about 1/2 heads worth
- 1/4 cup (50 g) wild rice
- 3/4 cup (180 ml) water
Method
- Cook your cauliflower rice as you please-I microwave mine for making this-taking care not to overcook it to mushiness; you want it just tender
- Put the wild rice and water in a saucepan, cover it, and set it over the lowest heat until all the water is gone-at least half an hour, maybe a bit more
- Toss together the cooked cauliflower rice and wild rice and season as you please
Makes 8 servings
- With the wild rice, this has 6 g carb, with 1 g fiber, for 5 g usable carb per 1/2 cup (85 g) serving
