Keto Cauliflower Puree Ketatoes Recipe

Ingredients

  • 1 head cauliflower or 1 1/2 pounds (680 g) frozen cauliflower
  • 4 tablespoons (56 g) butter salt and pepper

Method

  1. Put the cauliflower in a microwaveable casserole dish with a lid, add a couple of tablespoons (30 ml) of water, and cover
  2. Cook it on high for 10 to 12 minutes or until quite tender but not sulfur-y smelling
  3. You may steam or boil the cauliflower, if you prefer
  4. Drain it thoroughly and put it through the blender or food processor until its well pureed
  5. Add butter, salt, and pepper to taste

Makes At least 6 generous servings

  1. Each with 5 grams of carbohydrates and 2 grams of fiber, for a total of 3 grams of usable carbs and 2 grams of protein
