- 2 avocados, pitted and halved
- 4 eggs
- sea salt and freshly ground black pepper, to taste
- 1 cup Asiago cheese, grated
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon dried rosemary
- 1 tablespoon fresh chives, chopped
Method
- Crack the eggs into the avocado halves, keeping the yolks intact.
- Sprinkle with salt and black pepper.
- Top with cheese, red pepper flakes, and rosemary.
- Arrange the stuffed avocado halves in a baking pan.
- Bake in the preheated oven at 420 degrees F for about 15 minutes.
- Serve garnished with fresh chives.
