Jicama-Guacamole Bites Recipe

Ingredients

Makes about 24 bites

  • 2 ripe Hass avocados, pitted and peeled
  • 2 garlic cloves, minced
  • 2 tablespoons minced green onions
  • 2 tablespoons fresh lime juice
  • salt and freshly ground black pepper
  • 1 large jicama
  • cilantro leaves, for garnish

Method

  1. In a medium bowl, combine the avocado, garlic, green onions and 1 tablespoon of the lime juice
  2. Season with salt and pepper to taste
  3. Mash with a fork until smooth but still slightly chunky
  4. Set aside
  5. Peel the jicama and cut it into 1/4-inch slices
  6. Use canape or cookie cutters to cut the slices into desired shapes, or use a knife to cut the jicama into 2-inch triangles
  7. Toss the jicama with the remaining lime juice to prevent discoloration
  8. Top each slice of jicama with a heaping teaspoonful of the guacamole
  9. Garnish each canape with cilantro leaf and arrange on a platter to serve
