Ingredients
- 255g frozen green beans
- 225g frozen cauliflower
- 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes, undrained
- 1 teaspoon basil
- 1 tsp minced garlic
- 1 tsp oregano
- ½ cup (80 g) chopped onion
- ½ cup (50 g) sliced celery
- ¼ cup (50 g) barley
- 1 tsp black pepper
- 700 ml low-salt vegetable broth
- 1½ 355 ml low-salt vegetable juice
Method
- In slow cooker, combine all ingredients except broth and vegetable juice
- In a medium bowl, combine broth and vegetable juice
- Pour over vegetable mixture in cooker
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours
- Yield: 6 servings
- Per serving: 331 g water; 103 calories (10% from fat, 21% from protein, 68% from carb)
