Italian Vegetable Soup Slow Cooker Recipe

Ingredients

  • 255g frozen green beans
  • 225g frozen cauliflower
  • 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes, undrained
  • 1 teaspoon basil
  • 1 tsp minced garlic
  • 1 tsp oregano
  • ½ cup (80 g) chopped onion
  • ½ cup (50 g) sliced celery
  • ¼ cup (50 g) barley
  • 1 tsp black pepper
  • 700 ml low-salt vegetable broth
  • 1½ 355 ml low-salt vegetable juice

Method

  1. In slow cooker, combine all ingredients except broth and vegetable juice
  2. In a medium bowl, combine broth and vegetable juice
  3. Pour over vegetable mixture in cooker
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours
  5. Yield: 6 servings
  6. Per serving: 331 g water; 103 calories (10% from fat, 21% from protein, 68% from carb)
