Italian Rice Casserole Slow Cooker Recipe

Ingredients

  • 1 pound (455 g) ground beef
  • 1 cup (160 g) chopped onion
  • 555 g uncooked long-grain rice
  • 735 g no-salt-added tomato sauce
  • 1 tsp Italian seasoning
  • ½ teaspoon minced garlic
  • 170g mozzarella, shredded
  • 1 cup (225 g) low-fat cottage cheese
  • 950 ml water

Method

  1. Place ground beef and chopped onion in a nonstick skillet
  2. Brown over medium-high heat and then drain
  3. Combine beef mixture and remaining ingredients in slow cooker
  4. Cover and cook on high for 6 hours or until the rice is tender
  5. Yield: 8 servings
  6. Per serving: 295 g water; 508 calories (26% from fat, 21% from protein, 53% from carb)
