Ingredients
- 1 pound (455 g) ground beef
- 1 cup (160 g) chopped onion
- 555 g uncooked long-grain rice
- 735 g no-salt-added tomato sauce
- 1 tsp Italian seasoning
- ½ teaspoon minced garlic
- 170g mozzarella, shredded
- 1 cup (225 g) low-fat cottage cheese
- 950 ml water
Method
- Place ground beef and chopped onion in a nonstick skillet
- Brown over medium-high heat and then drain
- Combine beef mixture and remaining ingredients in slow cooker
- Cover and cook on high for 6 hours or until the rice is tender
- Yield: 8 servings
- Per serving: 295 g water; 508 calories (26% from fat, 21% from protein, 53% from carb)
