Ingredients
- 1 pound (455 g) boneless skinless chicken breast, cubed
- 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes, undrained
- 2 potatoes, peeled and cubed
- 1 cup (130 g) chopped carrots
- ¾ cup (75 g) chopped celery
- 1 cup (160 g) chopped onion
- 115g mushrooms, sliced
- ½ teaspoon basil
- ½ teaspoon dill weed
- 1 tsp Italian seasoning
- ½ teaspoon black pepper
Method
- Combine all ingredients in slow cooker
- Cover and cook on low 8 to 10 hours until vegetables are tender
- Yield: 5 servings
- Per serving: 349 g water; 249 calories (6% from fat, 41% from protein, 53% from carb)
