Ingredients
Makes 1 loaf
- 1 1/2 cups warm plain soy milk
- 1 tablespoon cider vinegar
- 3¾ cups all-purpose flour
- 2 tablespoons sugar
- 1 1/2 teaspoons salt
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup golden raisins
Method
- Preheat the oven to 375°F
- Lightly oil a baking sheet and set aside
- In a small bowl, combine the soy milk and vinegar and set aside
- In a large bowl, combine the flour, sugar, salt, baking powder and baking soda
- Mix until blended
- Mix in the raisins and the soy milk mixture to make a soft dough
- Turn the dough out onto a lightly floured work surface and knead for 1 minute, then shape into around loaf
- Place the loaf on the prepared baking sheet and flatten the loaf with your hands so that it is about 2 to 3 inches high
- Use a sharp knife to cut an x-shaped slash into the top of the loaf
- Bake until golden brown and a toothpick inserted in the center comes out clean, about 40 to 45minutes
- Cool on a wire rack for 20 minutes before slicing
