Ingredients
Makes 6 servings
- 31/2 cups plain or vanilla soy milk
- 1/2 cup sugar
- 1/2 cup dark molasses
- 1/2 cup yellow cornmeal
- 1/2 teaspoon salt
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
Method
- Preheat the oven to 350°F
- Grease a 2-quart gratin dish or 9-inch square baking pan and set aside
- In a large saucepan, combine the soy milk, sugar and molasses over medium heat and cook, stirring, until blended
- Slowly add the cornmeal, whisking to incorporate
- Cook, stirring until thickened, 5 to 7 minutes
- Stir in the salt, allspice, cinnamon and ginger and remove from the heat
- Pour the mixture into the prepared pan
- Bake until the center is set, about 1 hour
