Ingredients
- Serving Size : 6
- 1/2 cup green onions – sliced
- 2 cloves garlic – finely chopped
- 1 tablespoon butter
- 1 package frozen spinach – thawed and drained
- 1/2 cup cottage cheese – creamed
- 1 cup milk
- 1/2 cup Bisquick. baking mix
- 3 eggs
- 1 teaspoon lemon juice
- 1/4 teaspoon pepper
- 3 tablespoons Parmesan cheese – grated
- 1/4 teaspoon ground nutmeg
Method
- Heat oven to 350 degrees.
- Grease 9″ pie plate.
- Cook and stir onions and garlic in margarine in 10″ skillet until onions are transparent, 2 to 3 minutes.
- Stir in spinach.
- Layer spinach mixture and cottage cheese in pie plate.
- Beat milk, baking mix, eggs, lemon juice and pepper until smooth, 15 seconds in blender on high or 1 minute with hand beater.
- Pour into pie plate.
- Sprinkle with Parmesan cheese and nutmeg.
- Bake until knife inserted in center comes out clean, about 35 minutes.
- Cool 5 minutes.
- Garnish with sliced ripe olives if desired.
