Impossible Garden Pie Recipe

Ingredients

  • Serving Size : 6
  • 2 cups chopped zucchini
  • 1 cup chopped tomato
  • 1/2 cup chopped onion
  • 1/3 cup grated Parmesan cheese
  • 1 1/2 cups milk
  • 3/4 cup Bisquick. baking mix
  • 3 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method

  1. Heat oven to 400 degrees.
  2. Lightly grease pie plate, 10×1 1/2 inches.
  3. Sprinkle zucchini, tomato, onion and cheese evenly in pie plate.
  4. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater.
  5. Pour evenly into pie plate.
  6. Bake until top is golden brown and knife inserted in center comes out clean, about 30 Minutes.
  7. Let stand 5 minutes before cutting.
  8. Garnish with tomato and zucchini slices if desired.
  9. Refrigerate any remaining pie.
  10. 6 servings.
  11. High Altitude Directions (3500 to 6500 feet): Bake 10-inch pie about 40 minutes; bake 9-inch pie about 35 minutes.
