Impossible Apricot Pie Recipe

Ingredients

  • Serving Size : 8
  • 1 cup Bisquick baking mix
  • 3/4 cup sugar
  • 1/4 cup butter – softened
  • 1 teaspoon vanilla
  • 3 eggs
  • 1 17 ounce can apricot halves – drained
  • 1 12 ounce can evaporated milk
  • 1/2 cup apricot preserves

Method

  1. Heat oven to 350 degrees.
  2. Grease a pie plate, 10 X 1-1/2 inches.
  3. Mix all ingredients except the preserves in a blender container until smooth, approximately 1 minute.
  4. Pour into the pie plate.
  5. Bake until a knife inserted in the center comes out clean, about 40 minutes; cool completely.
  6. Heat the preserves over low heat until melted.
  7. Spread over the pie; cool.
