Ingredients
Makes 4 servings
- 1 1/2 pints vegan vanilla ice cream, softened
- 4 Vegan Dessert Crepes
- 2 tablespoons vegan margarine
- 1/4 confectioners sugar
- 1/4 cup fresh orange juice
- 1 tablespoon fresh lemon juice
- 1/4 cup Grand Marnier or other orange-flavored liqueur
Method
- Use a large knife to cut one pint of ice cream into quarters vertically (you can do this while the ice cream is still in the container)
- Peel away the container and discard it
- Arrange one whole quarter and 1/4 cup of the remaining 1/2 pint of ice cream end to end on a piece of plastic wrap, enclose it in the wrap and use your hands to shape it into a log
- Repeat with the remaining ice cream to make four logs
- Roll each of the ice cream logs inside each of the crepes
- Once the crepes are filled, freeze them for about 30 minutes to firm up
- In a small skillet, heat the margarine over medium heat
- Add the sugar
- Stir in the orange juice, lemon juice and Grand Marnier
- Simmer, cooking off most of the alcohol, about 2 minutes
- To serve, place the filled crepes on dessert plates and spoon some of the orange sauce over each crepe
