Hot Sour Soup Recipe
Ingredients
Makes 4 servings
- 1 cup fresh shiitake mushroom caps, lightly rinsed, patted dry and cut into 1/4-inch-thick strips
- 1 (6-ounce) can bamboo shoots, drained, rinsed and cut into matchsticks
- 1 (6-ounce) can water chestnuts, drained, rinsed and cut into 1/4-inch dice
- 1/4 cup minced green onions
- 2 garlic cloves, minced
- 3 tablespoons rice vinegar
- 3 tablespoons soy sauce
- 1 teaspoon minced fresh ginger
- 1 teaspoon Asian chili paste
- 6 cups light vegetable broth or water
- salt and freshly ground black pepper
- 1 tablespoon cornstarch blended with 3 tablespoons water
- 6 ounces firm tofu, drained and cut into 1/2-inch dice
- 1 tablespoon toasted sesame oil
Method
- In a large soup pot, combine the mushrooms, bamboo shoots, water chestnuts, green onions, garlic, vinegar, soy sauce, ginger and chili paste
- Stir in the broth and season with salt and pepper to taste
- Bring to a boil, then reduce heat to low and simmer for 30 minutes
- Return to a boil and stir in the cornstarch mixture, stirring until the soup thickens slightly
- Add the tofu, then turn off the heat and drizzle with the sesame oil and serve
