Ingredients

  • 3 lemons, cut into quarters
  • 4 tablespoons sugar
  • 2 cups spanish manzanilla sherry
  • 2 tablespoons triple sec
  • soda water

Method

  1. Combine 3 of the lemon wedges with 1 tablespoon of the sugar in a pint glass and muddle using a pestle or wooden spoon
  2. Add 1 cup of ice, ½ cup of sherry, and 1½ teaspoons triple sec
  3. Cover the pint glass with the bottom half of a metal shaker and shake vigorously for 30 seconds
  4. Pour into a highball glass and top with a splash of soda water
  5. Make 3 more cocktails in the same way
