Ingredients
- 1½ pounds (680 g) new potatoes
- ¼ cup (60 ml) water
- ¼ cup (55 g) unsalted butter, melted
- 2 tbsps (12 g) fresh parsley
- 1 tbsp (15 ml) lemon juice
- 1 tbsp (3 g) fresh chives
- 2 tbsps (8 g) fresh dill weed
Method
- Wash potatoes and then peel a strip from around the center of each potato
- Place the potatoes in a slow cooker; add water
- Cover and cook on high for 2½ to 3 hours
- Drain well
- In saucepan, heat butter with parsley, lemon juice, chives, and dill
- Pour mixture over potatoes; toss until thoroughly coated
- Yield: 6 servings
- Per serving: 101 g water; 175 calories (39% from fat, 7% from protein, 54% from carb)
