Hearty Potato Curry Indian Recipe
Ingredients
- Serves: 4
- 1 lb potatoes, cut into 1-inch cubes
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp peppercorns
- 1 cinnamon stick
- 1 cups vegetable stock
- 1 tsp tamarind paste
- 1 bay leaf
- 1/4 tsp red pepper, crushed
- 1/2 tsp garam masala
- 4 garlic cloves, minced
- 2 tsp ginger, minced
- 1 onion, diced
- 2 tbsp vegetable oil
- 1 1/2 tsp paprika
- 1 1/2 tsp turmeric
- 1/2 cup frozen peas
- 2 cups coconut milk
- 2 tbsp all purpose flour
- pepper
- salt
Method
- Heat 1 tbsp oil in the pan over medium heat.
- Add onion and cook until golden brown, about 3 minutes.
- Add powder spices and stir for 1 minute.
- Transfer onion mixture to the blender with tamarind, ginger, garlic, and coconut milk and blend until smooth.
- Pour blended mixture into the slow cooker with remaining ingredients except for peas and flour.
- Cover and cook on low for 8 hours.
- Add peas and stir well.
- Whisk flour in little water and pour into the slow cooker.
- Stir well and serve.
