Healthy Spinach Lentils Indian Recipe

Ingredients

  • Serves: 4
  • 1 cup yellow split peas
  • 3 1/2 cups water
  • 10 oz spinach, chopped
  • 1 tsp cumin seeds
  • 1 tbsp fresh ginger, peeled and minced
  • 3 garlic cloves, minced
  • 1 tsp mustard seeds
  • 1 medium onion, diced
  • 15 oz can tomatoes, drained and diced
  • 2 jalapeno pepper, cored and diced
  • 1 tsp turmeric
  • 1/2 tsp coriander
  • 1/4 tsp cayenne
  • 1 tsp salt

Method

  1. Add all ingredients except spinach into the slow cooker and stir well.
  2. Cover and cook on high for 4 hours.
  3. Add spinach and cook for another 20.
  4. Stir well and serve.
