Low Fat Basic Salad Dressing

Ingredients

  • 2 teaspoons garlic, finely minced
  • 1 tablespoon Dijon mustard
  • 1/2 cup balsamic vinegar
  • 1/4 cup hot water
  • 1 tablespoon sugar
  • 1 tablespoon olive oil
  • salt and pepper, to taste
  • Method

  • In a small bowl, combine the garlic and mustard and mix well.
  • Whisk in the balsamic vinegar, hot water and sugar.
  • Taste the dressing; the sugar should take the edge off the vinegar.
  • Slowly add the olive oil, whisking continuously, until emulsified.
  • Season with salt and pepper.
  • Use immediately or cover and refrigerate.
