Ingredients
- Serves: 6
- 2 cups green lentils, rinsed and drained
- 3 cups water
- 6 oz can tomato paste
- 14 oz can coconut milk
- 1 tsp cumin
- 1 tsp curry powder
- 1/2 tsp ground coriander
- 1 tsp turmeric
- 1 tsp vegetable oil
- 6 garlic cloves, minced
- 1 large onion, chopped
- 1 1/4 tsp salt
Method
- Heat oil in the pan over medium heat.
- Add garlic and onion to the pan and saute for 5 minutes.
- Add cumin, curry powder, coriander, turmeric, and salt and saute for 1 minute.
- Transfer pan mixture to the slow cooker with remaining all ingredients.
- Stir well.
- Cover and cook on low for 6 hours.
- Serve warm with rice and enjoy.
