Ingredients

- 1 can crushed pineapple – (4 oz)
- 3/4 cup oil
- 1 1/3 cups sugar
- 1 teaspoon vanilla
- 1 cup flaked coconut
- 3 large eggs
- 2 1/2 cups sifted all-purpose flour
- 1 teaspoon salt
- 3/4 teaspoon ginger
- 1 teaspoon baking powder
- 1/2 teaspoon nutmeg
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 2 cups shredded carrots
Method
- Beat oil, sugar and vanilla together.
- Beat in eggs one at a time, beating well after each addition.
- Sift flour, salt, baking powder, soda, and spices together.
- Stir into creamed mixture, alternating with carrots and coconut.
- Fold in drained pineapple.
- Bake.
- Ice with Lemon Mace Icing
