Air Fryer Jalapeno Popper Hasselback Chicken

Ingredients

SERVES 2.

  • 4 slices sugar-free bacon, cooked and crumbled
  • 2 ounces full-fat cream cheese, softened
  • 1/2 cup shredded sharp Cheddar cheese, divided
  • 1/4 cup sliced pickle jalapenos
  • 2 (6-ounce) boneless, skinless chicken breasts

Method

  1. In a medium bowl, place cooked bacon, then fold in cream cheese, half of the Cheddar, and the jalapeno slices
  2. Use a sharp knife to make slits in each of the chicken breasts about 3/4 of the way across the chicken, being careful not to cut all the way through
  3. Depending on the size of the chicken breast, you’ll likely have 6-8 slits per breast
  4. Spoon the cream cheese mixture into the slits of the chicken
  5. Sprinkle remaining shredded cheese over chicken breasts and place into the air fryer basket
  6. Adjust the temperature to 350°F and set the timer for 20 minutes
  7. Serve warm
