Halibut Marengo Seafood Recipe

Ingredients

  • 4 halibut steaks — (4 to 6 oz. each)
  • salt and pepper
  • 1 medium tomato — diced
  • 1/4 cup sliced fresh mushrooms
  • 1/4 cup onions — sliced
  • 1/4 cup diced celery
  • 1 tablespoon lemon juice
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon thyme — crushed
  • 1/8 teaspoon salt
  • 1 dash pepper
  • chopped parsley

Method

  1. Sprinkle halibut with salt and pepper and place in shallow microwave safe dish
  2. Spoon tomato over halibut
  3. In 2 cup microwave safe dish combine mushrooms, onions, celery, lemon juice, oil, thyme, salt and pepper; mix well
  4. Microcook, covered with vented plastic wrap, on high for 2 to 3 minutes or until crisp-tender
  5. Spoon over halibut
  6. Microcook, covered, on high for 4 to 6 minutes or until halibut flakes when tested with a fork
  7. Garnish with chopped parsley
