Ingredients
Makes 4 servings
- 1/3 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon minced fresh oregano or 1 teaspoon dried
- 1 teaspoon minced fresh thyme or 1/2 teaspoon dried
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound seitan cut into 1-inch cubes
- 8 ounces small white mushrooms, lightly rinsed and patted dry
- 2 small zucchini, cut into 1-inch chunks
- 1 medium yellow bell pepper, cut into 1-inch squares
- 12 ripe cherry tomatoes
Method
- In a medium bowl, combine the vinegar, oil, oregano, thyme, garlic, salt and black pepper
- Add the seitan, mushrooms, zucchini, bell pepper and tomatoes, turning to coat
- Marinate at room temperature for 30 minutes, turning occasionally
- Drain the seitan and vegetables, reserving the marinade
- Preheat the grill
- * Thread the seitan, mushrooms and tomatoes onto skewers
- Place the skewers on the hot grill and cook, turning kabobs once halfway through grilling, about10 minutes total
- Drizzle with a small amount of the reserved marinade and serve immediately
