Grilled Sardines Spanish Recipe

Ingredients

  • 8 fresh sardines, scaled and gutted
  • spanish extra-virgin olive oil
  • sea salt to taste

Method

  1. Brush the sardines lightly with olive oil and season with salt
  2. Lay the sardines on a grill over hot charcoals or a high flame and cook for 1 to 2 minutes on each side
  3. Transfer to a platter and garnish with more salt and a drizzle of olive oil
  4. If you want to fillet the sardines before serving, hold the sardine with its belly flat on the platter
  5. With your other hand, pinch the tail and pull up toward the head
  6. The spine and bones should pull out easily, leaving two fillets
