Green Herbed Rice Slow Cooker Recipe

Ingredients

Recipe for: Sabzi Polo

Serves 4

Active Time 5 minutes

Pressure/Manual (High) Natural/Quick Release

  • 1½ cups water
  • 1 cup basmati rice, rinsed and drained
  • ½ cup mixed dried herbs for sabzi polo (see Note)
  • 1 teaspoon salt
  • 1 tablespoon chilled salted butter
  • grilled tomato wedges (optional)

Method

  1. In the Instant Pot, combine the water, rice, dried herbs, and salt
  2. Stir to combine
  3. Cut the butter into small pieces and sprinkle it over the rice
  4. Secure the lid on the pot
  5. Close the pressure-release valve
  6. Select MANUAL and set the pot at HIGH pressure for 4 minutes
  7. At the end of the cooking time, allow the pot to sit undisturbed for 10 minutes, then release any remaining pressure
  8. Before serving, stir gently to avoid breaking the rice
  9. Transfer the rice mixture to a serving platter
  10. Top with grilled tomato wedges, if desired
