Greek Lima Beans Pressure Cooker Recipe

Ingredients

SERVES 4 – Cooker: 5- to 7-quart – Time: 3 minutes at HIGH pressure

  • 1 (10-ounce) package frozen baby lima beans (no need to thaw)
  • 2 tablespoons coarsely chopped fresh flatleaf parsley
  • 1 tablespoon minced garlic
  • ½ teaspoon sea salt, plus more to taste
  • 1 cup vegetable broth or water
  • 2 to 3 tablespoons good-quality olive oil, to taste
  • freshly ground black pepper
  • 1 lemon, halved or quartered, plus wedges for serving

Method

  1. Place the lima beans, parsley, garlic, and ½ teaspoon salt in a 5- to 7-quart pressure cooker
  2. Add the broth and oil
  3. Bring to a boil
  4. Close and lock the lid
  5. Set the burner heat to high
  6. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  7. Set a timer to cook for 3 minutes
  8. Remove the pot from the heat and let stand a few minutes
  9. Open the cooker with the Quick Release method
  10. Be careful of the steam as you remove the lid
  11. The beans should be tender when pierced with the tip of a knife
  12. If the beans are not totally cooked, cover the pot and cook without pressure for a few minutes over medium heat
  13. Stir, season to taste with salt and pepper, and squeeze in the juice from halved or quartered lemon
  14. Serve immediately with lemon wedges, if you like
