Ingredients
Makes 4 servings
- 1/2 cup vegan granola
- 2 tablespoons creamy peanut butter or almond butter
- 1 tablespoon vegan margarine
- 1 tablespoon pure maple syrup
- 1/2 teaspoon ground cinnamon
- 4 Granny Smith or other firm baking apples
- 1 cup apple juice
Method
- Preheat the oven to 350°F
- Grease a 9 x 13-inch baking pan and set aside
- In a medium bowl, combine the granola, peanut butter, margarine, maple syrup and cinnamon and mix well
- Core the apples and stuff the granola mixture into the centers of the apples, packing tightly
- Place the apples upright in the prepared pan
- Pour the apple juice over the apples and bake until tender, about 1 hour
- Serve warm
