Granola-Stuffed Baked Apples Recipe

Ingredients

Makes 4 servings

  • 1/2 cup vegan granola
  • 2 tablespoons creamy peanut butter or almond butter
  • 1 tablespoon vegan margarine
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 4 Granny Smith or other firm baking apples
  • 1 cup apple juice

Method

  1. Preheat the oven to 350°F
  2. Grease a 9 x 13-inch baking pan and set aside
  3. In a medium bowl, combine the granola, peanut butter, margarine, maple syrup and cinnamon and mix well
  4. Core the apples and stuff the granola mixture into the centers of the apples, packing tightly
  5. Place the apples upright in the prepared pan
  6. Pour the apple juice over the apples and bake until tender, about 1 hour
  7. Serve warm
