Golden Potato Soup Recipe

Ingredients

Makes 4 to 6 servings

  • 1 tablespoon olive oil
  • 3 medium shallots, chopped
  • 4 cups vegetable broth or water
  • 3 medium russet potatoes, peeled and diced
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup plain unsweetened soy milk Salt and freshly ground black pepper
  • 1 tablespoon minced chives, for garnish

Method

  1. In large saucepan, heat the oil over medium heat
  2. Add the shallots, cover and cook until softened, about 5 minutes
  3. Add the broth and potatoes and bring to a boil
  4. Reduce heat to low and simmer, uncovered, until the potatoes are soft, about 20 minutes
  5. Puree the potato mixture in the pot with an immersion blender or in a blender or food processor, in batches if necessary and return to the pot
  6. Stir in the soy milk and season with salt and pepper to taste
  7. Simmer for 5 minutes to heat through and blend flavors
  8. Ladle the soup into bowls, sprinkle with chives and serve
