Ingredients
Makes 4 to 6 servings
- 1 tablespoon olive oil
- 3 medium shallots, chopped
- 4 cups vegetable broth or water
- 3 medium russet potatoes, peeled and diced
- 2 medium sweet potatoes, peeled and diced
- 1 cup plain unsweetened soy milk Salt and freshly ground black pepper
- 1 tablespoon minced chives, for garnish
Method
- In large saucepan, heat the oil over medium heat
- Add the shallots, cover and cook until softened, about 5 minutes
- Add the broth and potatoes and bring to a boil
- Reduce heat to low and simmer, uncovered, until the potatoes are soft, about 20 minutes
- Puree the potato mixture in the pot with an immersion blender or in a blender or food processor, in batches if necessary and return to the pot
- Stir in the soy milk and season with salt and pepper to taste
- Simmer for 5 minutes to heat through and blend flavors
- Ladle the soup into bowls, sprinkle with chives and serve
