Ingredients
- 1 pound (900 g) carrots, sliced
- ½ cup (80 g) chopped onion
- ¼ cup (60 ml) water
- ¼ cup (85 g) honey
- ¼ cup (80 g) apricot preserves
Method
- Place carrots and onions in slow cooker
- Add water
- Cover and cook on low 9 hours
- Drain liquid from slow cooker
- In a small bowl, mix honey and preserves together
- Pour over carrots
- Cover and cook on high 10 to 15 minutes
- Yield: 8 servings
- Per serving: 121 g water; 110 calories (2% from fat, 4% from protein, 94% from carb)
