Glazed Carrots Slow Cooker Recipe

Ingredients

  • 1 pound (900 g) carrots, sliced
  • ½ cup (80 g) chopped onion
  • ¼ cup (60 ml) water
  • ¼ cup (85 g) honey
  • ¼ cup (80 g) apricot preserves

Method

  1. Place carrots and onions in slow cooker
  2. Add water
  3. Cover and cook on low 9 hours
  4. Drain liquid from slow cooker
  5. In a small bowl, mix honey and preserves together
  6. Pour over carrots
  7. Cover and cook on high 10 to 15 minutes
  8. Yield: 8 servings
  9. Per serving: 121 g water; 110 calories (2% from fat, 4% from protein, 94% from carb)
