Gingery Brown Jasmine Rice And Lentils Pressure Cooker Recipe

Ingredients

SERVES 4 to 6 – Cooker: 5- to 7-quart – Time: 18 minutes at HIGH pressure

  • 1 tablespoon olive oil
  • 1 tablespoon minced peeled fresh ginger
  • 2 cloves garlic, minced
  • 2 cups brown jasmine rice
  • ½ cup dried French green lentils
  • 2 (3-finger) pinches sea salt
  • 3¼ cups vegetable broth or spring or filtered water
  • 1 tablespoon sesame seeds, for serving

Method

  1. In a 5- to 7-quart pressure cooker, heat the oil over medium heat until hot
  2. Add the ginger and garlic and stir for 30 seconds
  3. Add the rice and cook, stirring, until it is ever so slightly golden, shiny, and coated with the oil, about 1 minute
  4. Add the lentils, salt, and broth
  5. Stir
  6. Close and lock the lid
  7. Place a heat diffuser on the burner and the pressure cooker on top
  8. Set the burner heat to high
  9. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  10. Set a timer to cook for 18 minutes
  11. Remove the pot from the heat
  12. Open the cooker with the Natural Release method; let stand for 10 minutes
  13. At time, if the pressure is not all released, open the valve
  14. Be careful of the steam as you remove the lid
  15. Spoon out the rice to a serving bowl and sprinkle with sesame seeds
