Ingredients
Makes 4 servings
- 1 pound extra-firm tofu, drained, patted dry and cut into 1/2-inch cubes
- 2 tablespoons soy sauce
- 2 tablespoons plus 1 teaspoon cornstarch
- 1 tablespoon plus 1 teaspoon canola or grapeseed oil
- 1 teaspoon toasted sesame oil
- 2 teaspoons grated fresh ginger
- 3 green onions, minced
- 1/3 cup hoisin sauce
- 1/2 cup vegetable broth
- 1/4 cup fresh orange juice
- 1 1/2 tablespoons fresh lime juice
- 1 1/2 tablespoons fresh lemon juice
- salt and freshly ground black pepper
Method
- Place the tofu in a shallow bowl
- Add the soy sauce and toss to coat, then sprinkle with 2tablespoons of cornstarch and toss to coat
- In a large skillet, heat 1 tablespoon of the canola oil over medium heat
- Add the tofu and cook until golden brown, turning occasionally, about 10 minutes
- Remove the tofu from the pan and set aside
- In the same skillet, heat the remaining 1 teaspoon canola oil and the sesame oil over medium heat
- Add the ginger and green onions and cook until fragrant, about 1 minute
- Stir in the hoisin sauce, broth and orange juice and bring to a simmer
- Cook until the liquid is reduced slightly and the flavors have a chance to meld, about 3 minutes
- In a small bowl, combine the remaining 1 teaspoon cornstarch with the lime juice and lemon juice and add to the sauce, stirring to thicken slightly
- Season with salt and pepper to taste
- Return the fried tofu to the skillet and cook until coated with the sauce and heated through
- Serve immediately
