Ingredients
Makes about 2 cups
- 6 firm peaches
- 1 cup golden raisins
- 1 cup sugar
- 1/4 cup apple cider vinegar
- 3 tablespoons chopped shallot
- 2 tablespoons grated fresh ginger
- 1/2 teaspoon ground ginger
- 1/2 teaspoon crushed red pepper
- 1 teaspoon salt
- 1/2 cup water
Method
- Immerse the peaches in a saucepan of boiling water for about 30 seconds to loosen the skin
- Remove the peaches from the water and submerge them in a bowl of ice water
- Peel, pit and chop the peaches and set aside
- In a large saucepan, combine the raisins, sugar, vinegar, shallot, fresh ginger, ground ginger, crushed red pepper, salt and water and bring to a boil over medium heat, stirring frequently
- Cook for 5 minutes
- Reduce the heat to low and add the chopped peaches
- Cook until the mixture thickens, stirring frequently, about 30 minutes
- Cool to room temperature
- Remove the chile and discard before serving
- If not using right away, spoon the chutney into a container with a tight-fitting lid
- Cover and refrigerate until needed
- Properly stored, this chutney will keep for up to 1 week
