Ingredients
Servings : 12 muffins.
- 2¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 pinch salt
- 1 teaspoon ground ginger
- ? cup coconut oil
- ½ cup applesauce
- 2 ripe bananas, mashed
- ? cup coconut milk
Method
- Combine the flour with the baking soda, baking powder, and salt
- Stir in the ginger, coconut oil applesauce, bananas, and coconut milk
- Spoon the batter into your muffin cups and bake in a preheated oven at 350°F for 20-30 minutes or until fragrant and golden brown
- Allow the muffins to cool completely before serving or storing
