Ingredients
- 2 large potatoes, sliced
- ½ cup (80 g) chopped onions
- ½ cup (50 g) sliced celery
- ¼ cup (38 g) diced green bell pepper
- ¼ cup (60 ml) vinegar
- ¼ cup (60 ml) oil
- 4 slices low-salt bacon, cooked and crumbled
Method
- Chopped parsley
- Combine all ingredients except bacon and parsley in slow cooker
- Stir and cook for 5 to 6 hours on low
- Garnish with bacon and parsley
- Yield: 3 servings
- Per serving: 270 g water; 381 calories (48% from fat, 7% from protein, 44% from carb)
