Garlic Sesame Cod Seafood Recipe

Ingredients

  • 4 sheets Reynolds Wrap heavy-duty
  • aluminum foil – (12″ x 18″ ea)
  • 4 cod fillets – (5 to 6 oz ea) — thawed if necessary
  • 1/4 cup soy sauce
  • 2 teaspoons dark sesame oil
  • 2 garlic cloves — minced
  • 1/4 teaspoon red pepper flakes
  • 3 cups fresh sugar snap peas or snow peas
  • 2 cups sliced mushrooms
  • 2 medium carrots — sliced
  • 2 teaspoons toasted sesame seeds

Method

  1. Preheat oven to 450 degrees or preheat grill to medium-high
  2. Spray foil with nonstick cooking spray
  3. Center one cod fillet on each sheet or Reynolds Wrap foil
  4. Combine soy sauce, oil, garlic and red pepper flakes; spoon one tablespoon over each fillet
  5. Top with vegetables
  6. Spoon remaining sauce over vegetables
  7. Bring up sides of foil and double fold
  8. Double fold ends to form a packet, leaving room for heat circulation inside packet
  9. Repeat to make four packets
  10. Bake 15 to 18 minutes on a cookie sheet in oven or grill 9 to 11 minutes in covered grill
  11. Sprinkle with sesame seeds before serving
  12. This recipe yields 4 servings
