Ingredients
Makes 4 sandwiches
- 1 pound extra-firm tofu, drained and patted dry
- 1 medium red bell pepper, finely chopped
- 1 celery rib, finely chopped
- 3 green onions, minced
- 1/4 cup shelled sunflower seeds
- 1/2 cup vegan mayonnaise
- 1/2 teaspoon salt
- 1/2 teaspoon celery salt
- 1/4 teaspoon freshly ground black pepper
- 8 slices whole grain bread
- 4 (1/4-inch) slices ripe tomato
- 4 lettuce leaves
Method
- Crumble the tofu and place it in a large bowl
- Add the bell pepper, celery, green onions and sunflower seeds
- Stir in the mayonnaise, salt, celery salt and pepper and mix until well combined
- Toast the bread, if desired
- Spread the mixture evenly onto 4 slices of the bread
- Top each with a tomato slice, lettuce leaf and the remaining bread
- Cut the sandwiches diagonally in half and serve
