Coconut Cake with Chocolate Ganache

Coconut Cake With Chocolate Ganache

Ingredients

Servings : 4-6 dishes.

Cake:

  • 3/4 cup almond butter, room temperature
  • 1 cup sugar
  • 4 tablespoons flax seeds, ground
  • 8 tablespoons water
  • 3/4 cup coconut flour
  • 1 1/2 cup all purpose flour
  • 2/3 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 pinch of salt

Dark chocolate ganache:

  • 5 oz dark chocolate
  • 4 oz coconut cream
  • 1 tablespoon almond butter

Method

  1. Mix the ground flax seeds with water and let them soak 5-10 minutes
  2. In a bowl, mix the butter and sugar for 4-5 minutes until fluffy and light in color
  3. Stir in the flax seeds and vanilla extract
  4. In another bowl, sift together the flours, cocoa powder with 1 pinch of salt, baking powder and baking soda
  5. Start incorporating the flour into the butter mixture, alternating it with milk
  6. Begin and end with flour
  7. Once all the ingredients are incorporated, turn your mixer to high heat and mix for 2 minutes
  8. Pour the mixture in a greased pan and bake in a preheated oven at 350F for 30-40 minutes
  9. To make the ganache: heat the coconut cream then stir in the chopped chocolate
  10. Mix well to combine then add the butter
  11. Pour the ganache over the cake
