Ingredients
- 4 ounces spanish orujo (galician clear distilled spirit) or other high-alcohol clear liquor, such as grappa or pisco
- 6 tablespoons sugar
- 1 strip lemon zest
- 8-10 coffee beans (optional)
- 6-8 apple or orange slices (optional)
Method
- Pour the alcohol into a small pot and stir in the sugar and lemon zest
- Cook the mixture over medium-high heat, stirring with a wooden spoon, until the sugar dissolves, about 3 minutes
- Once the sugar melts, carefully light the alcohol with a match
- When the flame turns blue, extinguish the flame by covering the pot with a lid and removing it from the stove
- Drop in some coffee beans and slices of fruit, if you like
- Queimada is traditionally served warm in clay cups
