Ingredients
Servings : 12 muffins.
- 2 tablespoons ground flax seeds
- 2 tablespoons water
- 1 large beet, pureed in a blender
- ¼ cup agave syrup
- ¼ cup maple syrup
- ¼ cup coconut oil
- ¼ cup coconut milk
- 1 pinch salt
- 1 teaspoon baking soda
- ½ cup cocoa powder
- 1 cup all-purpose flour
- ½ cup oat flour
Method
- Mix the flax seeds with the water, beet puree, agave syrup, maple syrup, coconut oil, and coconut milk in a bowl
- Stir in the rest of the ingredients and mix really well
- Spoon the batter into your muffin cups and bake in a preheated oven at 350°F for 20 minutes or until golden brown and fragrant
- When done, remove the muffins from the oven and allow them to cool in the pan before serving
