Ingredients
Makes 2 servings
- 1/4 cup sugar
- 1 cup hot espresso or strong brewed coffee
- 1 1/2 cups soy milk or other dairy-free milk
- 1 1/2 cups ice cubes
Method
- In a heatproof bowl, combine the sugar and the hot espresso, stirring to dissolve
- Refrigerate the espresso mixture until chilled, 2 hours
- In a blender or food processor, combine the chilled espresso mixture, soy milk and ice and blend until smooth
- Serve immediately
