Frozen Soy Cappuccino Recipe

Ingredients

Makes 2 servings

  • 1/4 cup sugar
  • 1 cup hot espresso or strong brewed coffee
  • 1 1/2 cups soy milk or other dairy-free milk
  • 1 1/2 cups ice cubes

Method

  1. In a heatproof bowl, combine the sugar and the hot espresso, stirring to dissolve
  2. Refrigerate the espresso mixture until chilled, 2 hours
  3. In a blender or food processor, combine the chilled espresso mixture, soy milk and ice and blend until smooth
  4. Serve immediately
