Fried Egg With Chorizo Spanish Recipe

Ingredients

  • 8 garlic cloves, peeled
  • ¼ cup Spanish extra-virgin olive oil, plus 1 tablespoon
  • 4 large eggs
  • sea salt to taste
  • 1 link chorizo, about 4 ounces, sliced into ¼-inch rounds
  • 4 fresh thyme sprigs

Method

  1. Split the garlic cloves by pressing down on them with the flat side of a kitchen knife
  2. Heat 1 tablespoon of the olive oil in a medium saute pan over medium heat
  3. Add the garlic and cook until lightly browned, about 5 minutes
  4. Transfer the garlic to a plate and set aside
  5. Increase the heat under the pan to medium-high and add the remaining ¼ cup of olive oil
  6. Cook the eggs one at a time
  7. For each, crack the egg into a glass
  8. When the oil just begins to smoke, tip the saute pan to a steep angle so the oil collects on one side to create a small bath
  9. Carefully slide the egg into the hot oil and spoon the hot oil over the egg 2 or 3 times
  10. The egg will be ready in about 30 seconds
  11. Transfer the egg to a serving plate with a slotted spoon, season to taste with salt, and keep warm
  12. Repeat with the remaining eggs
  13. Pour the olive oil from the pan into a small bowl and set aside
  14. Return the pan to the stovetop
  15. Add the chorizo and cook for 30 to 45 seconds over medium-high heat, flipping the rounds when they begin to brown
  16. Add the thyme and continue cooking for 1 minute
  17. To serve, divide the chorizo and thyme among 4 plates, top each with an egg, and garnish with the re-served garlic
  18. Sprinkle with sea salt and drizzle the reserved cooking oil over each plate
