Fresh Rhubarb Cheesecake Recipe

Ingredients

  • 1 (9 inch) unbaked pie shell
  • 3 cups chopped fresh rhubarb
  • 1 cup white sugar plus 2 tablespoons
  • 3 tablespoons all-purpose flour
  • 1 (8 ounce) package cream cheese, softened
  • 2 eggs
  • 1 (8 ounce) container sour cream
  • 1 teaspoon vanilla extract

Method

  1. Preheat oven to 400F
  2. In a medium bowl, toss rhubarb with ½ cup sugar and flour
  3. Pour into pie shell
  4. Bake 15 minutes
  5. Remove and cool
  6. Lower oven to 350F
  7. In a large mixing bowl, beat together cream cheese and ½ cup sugar until smooth
  8. Add in eggs one at a time until just combined
  9. Pour mixture into pie shell over rhubarb
  10. Bake 30 minutes, until just set
  11. Remove from oven and set aside
  12. In a small bowl, combine sour cream, 2 tablespoons sugar and vanilla
  13. Spread over cheesecake while still hot
  14. Cool, cover and chill overnight
  15. Garnish suggestion – fresh strawberry slices
