Ingredients
- 1 (9 inch) unbaked pie shell
- 3 cups chopped fresh rhubarb
- 1 cup white sugar plus 2 tablespoons
- 3 tablespoons all-purpose flour
- 1 (8 ounce) package cream cheese, softened
- 2 eggs
- 1 (8 ounce) container sour cream
- 1 teaspoon vanilla extract
Method
- Preheat oven to 400F
- In a medium bowl, toss rhubarb with ½ cup sugar and flour
- Pour into pie shell
- Bake 15 minutes
- Remove and cool
- Lower oven to 350F
- In a large mixing bowl, beat together cream cheese and ½ cup sugar until smooth
- Add in eggs one at a time until just combined
- Pour mixture into pie shell over rhubarb
- Bake 30 minutes, until just set
- Remove from oven and set aside
- In a small bowl, combine sour cream, 2 tablespoons sugar and vanilla
- Spread over cheesecake while still hot
- Cool, cover and chill overnight
- Garnish suggestion – fresh strawberry slices
