Ingredients
Makes 2 servings
- 1/3 cup unsalted raw cashews
- 1 1/4 cups chilled plain or vanilla soy milk or other nondairy milk
- 1 tablespoon pure maple syrup or agave syrup
- 1 teaspoon pure vanilla extract
- 1 cup fresh cherries, pitted
Method
- In a high-speed blender, grind the cashews to a fine powder
- Add the soy milk, maple syrup and vanilla and blend until smooth
- Add the cherries and blend until thick and creamy
- Pour into glasses and serve at once
