Ingredients
Makes 4 to 6 servings
- 1 package active dry yeast (21/4 teaspoons)
- 1/2 teaspoon sugar
- 1¾ cups warm water
- 3 cups all-purpose flour
- 1 teaspoon salt
- 3 tablespoons olive oil
- 2 medium shallots, cut into 1/4-inch slices
- 1/2 cup chopped figs
- salt and freshly ground black pepper
- 2 tablespoons shredded basil leaves
Method
- In a small bowl, combine the yeast and sugar
- Add 1/4 cup of the water and stir to dissolve
- Set it aside for 5 minutes
- In a large bowl, combine the flour and salt, stirring to blend
- Pour in the yeast mixture, 2tablespoons of the oil and as much of the remaining water as needed to form a soft dough
- Turn the dough out onto a lightly floured work surface and knead until smooth and elastic, about 3minutes
- Place the dough in a large lightly oiled bowl, turning the dough to coat with oil
- Cover with plastic wrap or a clean dish towel and let rise in a warm place until doubled in size, about 1 hour
- Preheat the oven to 400°F
- Lightly oil a pizza pan or baking sheet and set aside
- Punch the dough down
- Stretch out the dough to fit the pan and place it on the prepared pan
- In a large skillet, heat the remaining 1 tablespoon of oil over medium heat
- Add the shallots, cover and cook until soft, about 7 minutes
- Spread the shallot mixture on top of the dough
- Sprinkle with the figs and season with salt and pepper to taste
- Use your thumb to make indentations across the surface of the dough, pressing the shallots and figs into the dough
- Bake until golden brown, about 20 minutes
- During the last 5 minutes of baking, remove from the oven and top with the basil, then return to the oven to finish baking
- Cool for 5 minutes
- Serve warm
