Ingredients
Makes 12 (7-TO 8-INCH) TORTILLAS
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1 1/2 tsps. baking powder
- 2 tsps. coconut or canola oil
- 1-2 tbsps. oil for frying
Method
- In the bowl of a stand mixer equipped with a dough hook, combine flour, salt and baking powder
- Add the coconut oil and 3/4 cup warm water with mixer running at a medium speed, scraping down the bowl as necessary
- When the mixture begins to form a ball, decrease mixing speed to low and continue to mix for 5-7 minutes, until dough is smooth
- Transfer from the mixing bowl to a well-floured work surface and divide the dough into 12 even balls
- Place the dough into a baking pan and cover the pan with a damp towel
- Allow the dough balls to rest for 1 hour
- On a lightly floured work surface, press each dough ball out into a 4-inch circle
- With a lightly floured rolling pin, roll each dough piece into a circle about 7-8 inches in diameter (or use a tortilla press)
- Heat a large skillet over medium-high heat and lightly brush with oil
- Add 1 of the tortillas to the skillet and cook for 30 seconds
- Turn the tortilla and cook for 30 seconds longer, until both sides have a blistered appearance
- Remove to a cooling rack and repeat until all tortillas are cooked, adding oil as necessary
