Flour Tortillas Recipe

Ingredients

Makes 12 (7-TO 8-INCH) TORTILLAS

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 1/2 tsps. baking powder
  • 2 tsps. coconut or canola oil
  • 1-2 tbsps. oil for frying

Method

  1. In the bowl of a stand mixer equipped with a dough hook, combine flour, salt and baking powder
  2. Add the coconut oil and 3/4 cup warm water with mixer running at a medium speed, scraping down the bowl as necessary
  3. When the mixture begins to form a ball, decrease mixing speed to low and continue to mix for 5-7 minutes, until dough is smooth
  4. Transfer from the mixing bowl to a well-floured work surface and divide the dough into 12 even balls
  5. Place the dough into a baking pan and cover the pan with a damp towel
  6. Allow the dough balls to rest for 1 hour
  7. On a lightly floured work surface, press each dough ball out into a 4-inch circle
  8. With a lightly floured rolling pin, roll each dough piece into a circle about 7-8 inches in diameter (or use a tortilla press)
  9. Heat a large skillet over medium-high heat and lightly brush with oil
  10. Add 1 of the tortillas to the skillet and cook for 30 seconds
  11. Turn the tortilla and cook for 30 seconds longer, until both sides have a blistered appearance
  12. Remove to a cooling rack and repeat until all tortillas are cooked, adding oil as necessary
