Ingredients
Makes 1 loaf
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup plain soy milk
- 3 tablespoons pure maple syrup
- 1 cup fresh or thawed frozen corn kernels
- 1/4 cup olive oil
- 1/4 cup canned jalapeno, chopped
Method
- Preheat the oven to 375°F
- Lightly oil an 8-inch square baking pan and set aside
- In a large bowl, combine the flour, cornmeal, baking powder and salt and set aside
- In a separate bowl, combine the soy milk, maple syrup, corn kernels, oil and chiles
- Add the wet ingredients to the dry ingredients and mix well with a few quick strokes
- Transfer the batter to the prepared pan and bake until golden brown and a toothpick inserted in the center comes out clean, about 30 minutes
- Cool 10 minutes
- Serve warm
