Fired-Up Jalapeno Cornbread Recipe

Ingredients

Makes 1 loaf

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup plain soy milk
  • 3 tablespoons pure maple syrup
  • 1 cup fresh or thawed frozen corn kernels
  • 1/4 cup olive oil
  • 1/4 cup canned jalapeno, chopped

Method

  1. Preheat the oven to 375°F
  2. Lightly oil an 8-inch square baking pan and set aside
  3. In a large bowl, combine the flour, cornmeal, baking powder and salt and set aside
  4. In a separate bowl, combine the soy milk, maple syrup, corn kernels, oil and chiles
  5. Add the wet ingredients to the dry ingredients and mix well with a few quick strokes
  6. Transfer the batter to the prepared pan and bake until golden brown and a toothpick inserted in the center comes out clean, about 30 minutes
  7. Cool 10 minutes
  8. Serve warm
