Energy Snack Balls Recipe

Ingredients

Makes 14 BALLS

Prep: 10 minutes

Cooking Time: 1 HOUR IN THE FREEZER

Serving size 1 ball

Calories 173 Protein 4 g Carbohydrates 16 g Fat 13 g Fiber 4 g Sugar 10 g Sodium <1 mg

  • 1 cup raw almonds
  • 6 medjool dates
  • 1/2 cup unsweetened dried cranberries
  • 21/2 tablespoons melted coconut oil
  • topping(s): 1/2 cup cacao nibs (for half of the bites) and 1/2 cup raw crushed walnuts (for half of the bites) or pistachios or pecans.

Method

  1. Place the almonds in a food processor or high-powered blender and pulse until the almonds are broken into small crumbs but before they turn into almond butter, about 2 pulses for 4 to 6 seconds each
  2. Scrape down the sides of the blender, making sure the almonds are not packed into the sides or corners of the food processor or blender
  3. Then add the remaining ingredients (except :For the topping) and pulse until smooth
  4. Place the toppings in separate bowls
  5. Empty the batter onto a large sheet of parchment paper and knead it well with your hands until it comes together into one large, uniform piece
  6. Take about 1 tablespoon of the batter and form a ball
  7. Roll the ball in your choice of topping, then place it on another piece of parchment paper
  8. Repeat
  9. Place the balls in the freezer for 1 hour, then remove and store in an airtight container in the fridge for up to 1 week or in the freezer for up to 1 month
