- 1 cup raw almonds
- 6 medjool dates
- 1/2 cup unsweetened dried cranberries
- 21/2 tablespoons melted coconut oil
- topping(s): 1/2 cup cacao nibs (for half of the bites) and 1/2 cup raw crushed walnuts (for half of the bites) or pistachios or pecans.
Method
- Place the almonds in a food processor or high-powered blender and pulse until the almonds are broken into small crumbs but before they turn into almond butter, about 2 pulses for 4 to 6 seconds each
- Scrape down the sides of the blender, making sure the almonds are not packed into the sides or corners of the food processor or blender
- Then add the remaining ingredients (except :For the topping) and pulse until smooth
- Place the toppings in separate bowls
- Empty the batter onto a large sheet of parchment paper and knead it well with your hands until it comes together into one large, uniform piece
- Take about 1 tablespoon of the batter and form a ball
- Roll the ball in your choice of topping, then place it on another piece of parchment paper
- Repeat
- Place the balls in the freezer for 1 hour, then remove and store in an airtight container in the fridge for up to 1 week or in the freezer for up to 1 month
