Emergency Casserole Recipe

Ingredients

Crust:

  • 1/4 cup butter
  • 2 rolls of Ritz crackers (or similar variety), finely crushed
  • salt, pepper.
  • plastic wrap.

Casserole:

  • 1 lb. hamburger (or two cans drained tuna or 1 can of corned beef or 1 can of Spam, diced)
  • 1 small onion, chopped coarsely
  • 1 tbsp. garlic, chopped
  • 2 cups of any pasta
  • 1 can green beans, drained
  • 1 can diced carrots, drained
  • 1 can Mushroom soup ( you can substitute any cream based soup.) 1 cup milk
  • tbsp olive oil

Topping:

  • 1 tube refrigerator dinner rolls

Method

  1. Preheat oven to 350F

To Make the Crust.

  1. Over low heat, melt butter
  2. Crush Ritz crackers
  3. A great inspiration for getting those crackers crushed really fine is to think of how my husband put me in this predicament
  4. Combine the crushed crackers with the melted butter
  5. Press the mixture into the bottom and along the sides of a 2-quart casserole, spritzed with non-stick vegetable spray
  6. Use plastic wrap to hold the crust in place and store in the refrigerator while you assemble the rest of the casserole

Casserole.

  1. Brown the hamburger on the stove with the chopped onions and garlic
  2. Salt and pepper to taste
  3. While you’re browning the hamburger, cook the pasta in boiling water with a pinch of salt and a dash of olive oil until al dente
  4. Don’t overcook
  5. Drain thoroughly
  6. In a mixing bowl, combine the browned hamburger, pasta, green beans, carrots, soup and milk
  7. Mix thoroughly
  8. Remembering to take the plastic wrap out, pour the mixture into the casserole and pat in place
  9. Drizzle the top lightly with olive oil
  10. Place in oven for about 30 minutes or until the casserole is bubbling nicely
  11. About 15 minutes before serving, carefully place a layer of the refrigerator rolls over the top of the casserole and bake until the rolls are golden brown
  12. Remove from oven and brush the rolls lightly with butter
  13. Serve with a green, tossed salad and your husband’s head, nicely garnished, on a platter for dessert
